Rather than following a specific idea or formula for choosing them, it's important that the colors you choose be whatever is most right for you.
But I can give you some ideas that will get you started thinking about it... Some style systems give you an entire color palette, with up to 60 different colors or more for creating your wardrobe, but an ideal color capsule would be a subset of this kind of palette. With a minimalist color palette, the goal is to simplify the capsule wardrobe process by choosing only a minimal number of colors. (1) You could choose a monochromatic capsule, by focusing on one neutral color, like black, grey, dark brown, ivory, or white, or one brighter color that you love. (2) You could choose two colors that are really shades of one color - like a lighter grey with a darker grey, or light brown with darker browns. Or, you could choose two colors that are similar in value, like ivory and medium grey. Generally, you wouldn't aim for sharp contrast, unless that is what looks best on you. (3) In a minimalist look, using three colors in your capsule would likely mean they would all be neutrals, like ivory, tan and dark brown. But the most important thing to keep in mind, for your minimalist color capsule, and for your minimalist wardrobe, in general, is ease.
